SOUP FROM THE CHINESE VILLAGE.


Greetings,
Today's recipe is a soup from a chinese village.

The Chinese love soups, must of their soups have medicinal values. They have soups for winter, spring, summer and autumn.

This old cucumber soup is good for those who work in the sun and those who are said to be ‘heaty’ [ the Chinese believe that when your yin and yean are not balanced , you either have too much heat or cold in your body]

Ingredients
1 old cucumber [in Asian markets, these are sold individually and are brown in color, the darker the color the older the cucumber]

In Australia we cannot find old cucumbers, so we have to leave some on the plant to get old, or buy old yellow ones and keep for a couple of weeks.
Note: cut open cucumber lengthwise, with a spoon, remove all the seeds and pulp, otherwise your soup will be sour.

Soup bones: chicken bones or pork bones are fine. [Boil just the bones, throw away the water, wash the bones, put in clean water in pot, and return the bones. This is to remove the scum from the bones, leaving you with a clear soup]

Add in 4 dates
4 small dried squids
Cut up cucumber, bring to boil, turn down heat, and simmer for 2 hours. Season to taste.
Serve with spring onions.
