With nothing better to do, COOK!

What a nice way to spend some time with family and friends, cooking and eating! Much better than going to a resturant! but sometimes we do need to go and try out now dishes and come home and give it a bashing !



The Yam cake made by a friend, it was cut up and then fried with garlic, chives, eggs benasprouts and chilie sauce.










The Japanese fried seaweed with fresh soybeans, sliced carrots.




This fresh looking salad, vitenamese, boil pork and prawns.with heaps of finely cut cabbage, herbs, served with a sauce.














The Korean seaweed salad, very nice taste. its a white sea weed, crunchy, mix with the Jap. mayo. a touch of lime.










This simple soup, made from seaweed and bonito flakes, served with a dash of yuzu. Really nice soup!

The sweet yam dessert , 'orh nee' My daughter's second try, turn out very nice. For this dessert , you do need alot of elbow grease, after steaming the yam you need to really pound it till its fine and smooth.













For the Ipoh hofun, we used chicken stock, prawn shell stock.













This is the fried rice, everyone's  favourite, fried with eggs, you can add prwans.
chilis, onions pounded ,you can find the recipes in my older postings.

YEE SANG (PROSPERITY DISH)

YEE SANG.
This is a very popular dish eaten during Chinese New Year.
To make this dish you need to do alot of cutting and peeling,
to start, get a very sharp knife.
you need,


1 raddish- white carrot
1 nashi pear
1 med. size cucumber
2 carrots
1 sargort ( chinese white turnip)
young ginger
lots of fresh corriander leaves
1 green apple
you can also add honey dew melon
pickle ginger
pickle leek
4 kaffar lime leaves.
wash and cut up finely, arrange in heaps around a big round plate.

for the sauce,
1/2 bowl apricot jam
1/2 bowl plum jam
2 tablsp. honey.
lime juice to taste
mix togather
slice fish thinly, use fresh salmon. tuna or smoked salmon.

mix the fish with
1/2 teasp. 5 spice pd.
1 tablsp. brandy
lime juice

For some crackle, deep fry some wontan skin or just sprinkle some cornflakes on top.
heap the fish in the middle sprinkle with crushed peanuts and sesame seeds.
mix well, more lime juice can be added as you eat.

MALAYSIAN MEE GORENG

MALAYSIAN MEE GORENG.
When visiting Malaysia, you must try this local dish.
It is easy to fry up at home.

You need.
1 pk. mee
1 bowl of bean shoots
4 pics. fried tow foo
1 sliced big onion
2 eggs.
chilly paste, tomato sauce
2tablesp. curry powder
lemon wedges and cut up spring onion, corriander to serve.
Heat up a wok, and 2 tablesp oil fry the onion, add the fried tow foo ,mee and stir well.
Add a dash of fish sauce, curry powder, tomato sauce. When everything is well mixed, push it aside, add a little oil, fry the eggs, add it back and stir, last add in the bean shoots, fry 1 min. dish up and serve with lemon wedges and fried onions, spring onions and corriander.

KAMPONG CHILLY FRIED RICE.



CHILLY FRIED RICE.

Fried rice is a simple and easy dish to make.

You need a plate of cold cooked rice,
2 eggs
4 small onions or 1/2 a big onion, 2 red chilies,
Pound this together.

In a bowl creak eggs, stir with a fork, add a dash of fish sauce. Fry , scramble and dish up.
Add 2 tablesp oil, fry the pounded chilly and onions till you can see some red chilly oil, add in the rice , stir well, add salt, pepper , black sauce and the fried eggs.

Mix till well heated through, the rice should be seperated and coated with the onion chilly. Stir in some chopped spring onions, dish up and serve.

Tip.
For a good fried rice, it is always good to use cold left over rice. If you want to use fresh rice, cool it well before frying or the rice will be lumpy.
Using small onions also gives this dish a better flavour.
You can also use dried prawns, soak this for 20mins. either pound this with the chilly onions or chop up and fry together.

SARDINE CURRY WITH LADY'S FINGERS.

This simple curry is a well loved curry, easy and simple to cook, something that you can cook up in 10mins. Can sardines is always found in Malaysian household. A good stand by for hungry people!!

You need a med size can of sardines.
Some lady's fingers, boil 5 mins.
Some tomatoes, 2 slices assam pieces.
Fry 1 sliced big onion, 3 garlic, 2 slices ginger, 2 curry leaves, add in the lady's fingers, tomatoes, 2 tablesp curry powder, the assam slices and 1 1/2 cups water,simmer 5 mins. Add in the sardines, 1/4 cup milk (optional) salt to taste.
Serve with toast bread or steam rice.

BEANS FRIED WITH MINCED PORK

This is also a very simple dish to cook.
You need 1/2 kilo beans, cut into 1/2
250gms pork mince or chicken mince
a bit of chopped up salt fish (optional)
3 chopped garlic.

Wash beans, drain well, deep fry in oil keep aside.
Fry garlic, mince pork, stir well, add a dash of chinese wine, salt ,pepper, sugar to taste, add in the fried beans and cook 2 mins, add salt fish if using.
1/2 bowl of water, to this add 1 1/2 teasp. cornflr, stir , and add to the beans, this is to thicken the sauce, stir well , dish up and serve with steam rice.

VEGETARIAN SOY SAUCE EGGS AND TOWFOO.

Hi folks,

I did a few posts while I was up there and should be back to normal soon.
Chinese New Year is just around the corner and there are many things to prepare.
Memories of grandmother’s, mother’s and aunties' cooking come flooding in! We’ll have to go slow and savour every bite when we eat.

Christmas is just days away! With all this festivals piling up, it's great food, glorious food, fantastic food, food for every one. So let's just enjoy, be thankful, be happy, be healthy and eat well.

Today’s recipe is a simple vegetarian dish.

Vegetarian soy sauce eggs and tow foo.
1 box tow foo, you can use it plain or cut up and deep fry it.
6 hard boiled eggs.
Boil 2 cups of water with ½ clove of garlic. Add more water if you want more sauce.
1 piece cinnamon bark
2 star anise.
1 leek, cut up.
2tablesp. Light soy sauce.
½ tablesp. Dark soy.
Boil 20 mins. Add in the hard boil eggs and tow foo.
Serve with chilly sauce.

SIMPLE HOME COOKED FOOD.

Greetings, here are some very simple home cooked dishes, easy and fast. Hope you'll enjoy them. This is a vegetable preserved with chilly and salt, "char choy"
This dish "char choy steamed pork' is a favourite and goes very well with porridge.
You can buy this in a can or packets. The ones in can taste better.
Wash and slice up 1/2 a can, soak 5 mins. in water, not too long or else you'll lose all the taste.

Slice up the pork, season with soy sauce, cornflour,abit of sugar, some chicken powder if you are using. mix in the sliced char choy and steam 20mins. on high.
serve with steam rice or porridge.

To cook the very popular teoh chew porridge is also very simple.
Wash 1/2 bowl rice, add 2 1/2 bowls of water, bring to boil, boil uncovered till you can see that the grains of rice is split. Switch off, cover for 15 mins and you can serve.


This is a simple tow foo dish. Buy 1 box of silken tofu, rinse with hot water. sprinkle with spring onions, fry some small dried ikan belis and chopped garlic till brown. Dish up with some hot oil onto the spring onions and tow foo, pour over some soy sauce and serve. This is very refreshing and goes very well with steam rice.
This is deep fried beans, with a dash of soy sauce. this is a very simple dish and you can taste the sweetness of the beans.
