Kampong Nasi Lemak
Hi,
Today I'll give the recipe for Nasi Lemak, another favourite with every one. In the Kampongs, this is usually served as breakfast.
This is rice cooked with the juice and the cream of the coccnut and served with a hot, sweet sambal , a few slices of cucumber and fried anchovies [ikan belis]
Most of the time, a bit more is cooked so the neighbours can have some.
This rice when cooked is then wraped in banana leaves into neat little packets .
In days gone by, this Nasi Lemak was sold for only 10cents a packet, today , expect to pay nothing less than a dollar!
In hotels today, you can get a plate of Nasi Lemak, with chicken curry and beef rendang for $10.00.
This is a simple basic recipe.
Nasi Lemak
2 cups rice,
1 cup coconut cream , 1cup coconut juice , optional, replace with water.
1/2 cup water.
1 teaspoon salt, 2-3 pandan leaves [ screw pine leaves] This pandan leaves usually grows wild in the Kampongs.
Steam in double saucepan or cook in rice cooker.
Sambal
2table sp. chilly powder or [pound your own dried chillies]
1/2 bowl small onions, 4 pips garlic , pound till fine.
1/2 bowl tamarind water, 1 tomato, cut into small cubes.
salt and sugar to taste.
Slice up 1 big onion and fry in 4 tablesp.oil ,add the rest of the ingredients and fry till the chilly oil is red.
Add tomato and tamarind water, simmer 10mins. Add seasonings.
The sambal is ready.
Slice cucumbers, deep fry ikan belis.
Sometimes hard boil eggs or fried eggs are added, fried peanuts may be added too.
Serve hot Nasi Lemak with the sambal, cucumbers and ikan belis on top.
For a more elaborate meal , add chicken curry and beef rendang.
