Satay anyone?




Hi everyone,

This is chicken satay, a favourite of young and old. In my Kampong cooking, I can teach you to make mouth watering satays!

People who come from Asia will know that Kampong means a little village. Some can be big or small.

Life style in the kampongs are friendly, close and easy going.

Cooking together also create a bond with the families living there.

Sooo, let's not muck around. Here's what you do.


Chicken Satay Recipe

It is best to use chicken breast, 1/2 kilo
cut to bite size pieces.

Ingredients to pound, [in the kampong this is done in the mortar and pestle but you can do this in your modern kitchen with your blender]
2 sticks of serai [lemon grass ]
1/2 " ginger
1/2"langkwas [galanga]
1/2"tumaric [kuyit]
5 small red onions
5 cloves garlic.

Chilly to taste, cut all these up to make it easier to pound or blend. Do not blend too fine, when blended,to this add 2 teasp. cummin powder, 1 teasp. fennel powder, 1 teasp corriander powder, 3 desp. browb sugar, salt to taste. 3 desp. cooking oil.

Marinate the meat with this 'rempah' and keep overnight in fridge or at least 4 hrs, for all the flavors to blend in. take them out and using skewers [soaked in water] skewer 4-5 pieces of meat onto the stick.

Next, make your sauce
1/2 jar rough peanut spread, mix with 1/2 can coconut cream, 1/2 cup sugar. salt to taste.

In a kwali or pan fry add 1/4 cup oil ,add in pounded chillies, 5 cloves garlic, fry till the oil is nice and red, add in the peanut mix. Boil 5 minutes.

When ready to cook, get you charcoal burning outside, or your BBQ burner, this is best cooked outside, [in the kampong the smell of satays drift far, far away, a smell that brings back memories of children's laughter, carefree childhood days, happiness of being in a big gathering of feasting]


In a bowl, put in 1/2 cup water, to this add 2 teasp sugar, 2 desp. oil
brush this [with a bashed lemon grass] onto your satay sticks before grilling and again when you turn the sticks over.

Serve with cucumber, onions, and pineapple.

In the Kampong, the women always have time to do their little rice bags made from the leaves of the coconut tree. These little bags are works of art, they have a little hole at the top and raw rice is fill in1/2 full . This is boiled, when cooked they are served with the satays.

TIP
You can make more satays and pack them in packs of 10 and freeze,
the sauce can be frozen too. So you can have satays when ever you like.
